I’ve had tripe before, but never in soup form. It wasn’t exactly my favorite thing in the world, though my dad’s been nudging me to give it another shot. I’ll have to see if I can find somewhere that can make the soup better than my kitchen can! 

I did find a spot that apparently makes awesome tripe mofongo (which is more garlic than jalapeno, I suppose), and I’ve been meaning to check it out. Hopefully soon?
